Lobster is a luxury ingredient. Most often, it’s presented as a grilled or steamed tail served upon the split shell. If you’re a lobster lover, as I am, dipping chunks in drawn butter is a thrill. But chef Marlin Kaplan performs his personal alchemy on perfect ravioli stuffed with a heady combo of lobster, corn and ricotta inside Pass-a-Grille’s Grace. They sit in a bowl of complex, uber-intense dark lobster stock garnished with a pair of diminutive rock lobster tails.
