Zack Gross immediately crossed much of his restaurant’s culinary repertoire off the list of possible submissions, even though he — more than most chefs — serves up food that would be at home in an adventurous home cook’s kitchen. He picked Z Grille’s spicy shrimp and jicama slaw, a relatively straightforward dish flavored with sambal oelek chili paste from Southeast Asia. Sounds exotic, but you can find it in any Asian grocery store and many supermarkets. Just don’t tell your guests that.
