Who doesnt love a frittata? They are tasty, fun and very easy to prepare. Being an extremely busy and poor, law student, I love them because they are inexpensive to make, and I can make a large one Sundays that will last me through the week.
After cooking it, I allow the frittata to cool and divide it into sections, wrap them in foil, and refrigerate; providing a breakfast that I can eat on the run cold, or later microwave on campus on a napkin. (And remember: do not put tin foil in the microwave.)
