With comforting classics like pizza and bowls at the forefront of Florish’s offerings, owners Keith and Jill Sedita wanted to craft their menu around dishes that non-vegans love, to help them overcome resistance to trying plant-based food. Expect fresh ingredients like herb-roasted vegetables and homemade cheeses and sauces when Florish debuts next month.
Located across from Plant High School, the 1,500-square-foot space was home to the now-closed Mirro’s Pizza location in South Tampa. The Tampa Bay Business Journal says Florish will only seat about 30 guests, as it’s geared towards take-out instead of dine-in.

“We learned that plant-based eating is better for our health, and for the health of the planet,” Jill Sedita states. “Along the way, we realized how difficult it is to find plant-based meals for our family in most restaurants. We began a mission to make plant-based eating delicious, simple and more available.”
Jill and Keith’s teenage sons, who both went vegan before their parents, also founded Green Gasparilla in an effort to make Tampa’s biggest parade as eco-friendly as possible.
From 2015-2020, Keith Sedita served as Vice President of New Business Development for Columbia Restaurant Group, and worked with some of Tampa’s hottest restaurants. Sedita and his wife now operate the LLC La Pianta, which they started in 2020 in preparation for Florish’s debut.
South Tampa’s Florish—slated to open in a few weeks—will hopefully be the first of many locations throughout Tampa Bay. The new plant-based restaurant will be open from 11 a.m.-3 p.m. Tuesday through Sunday, with plans to expand operating hours.
