With summer creeping closer and Memorial Day celebrations happening throughout the Bay area, it's time to fire up the stove (or grill) for burgers, feta-inflected burgers.
Alongside the feta, these babies, an original recipe of a friend's, call for pesto, caramelized onions and mozzarella cheese.
Creamy Pesto-Feta Cheeseburgers
Makes 4
Ingredients
3 tablespoons olive oil
2 pounds ground beef
1 pack of feta cheese
Salt and pepper
1 red onion, sliced
2 tablespoons mayonnaise
2 tablespoons pesto
4 slices mozzarella cheese
Directions
Heat 2 tablespoons olive oil in a cast-iron skillet over high heat on the top of the stove. In a bowl, knead together the ground beef and almost all the feta (we'll need some to sprinkle over the burgers later). Divide the mixture into 4 equal portions, forming each into a patty. Once the oil starts to simmer, season the burgers with salt and pepper and cook until golden brown and charred on one side, about 3 minutes.
In another pan, cook the red onion and remaining oil until caramelized. Flip the burgers and grill for 4 minutes. Mix the mayo and pesto together in another bowl until fully combined, and then top the patties with mozzarella for the last minute of cooking.
Spread the inside of 4 toasted buns with the pesto-mayo mixture. Place the burgers on the buns, topping each with the onion and leftover feta. Serve immediately.
