What's better than an icy popsicle on a sweltering summer day? What about a cool, refreshing cocktail? Now you can have your booze and eat it too with the newest trend in cocktails: pop-tails! These cool creations, reminiscent of frozen versions of jello shots, are popping up in food and drink blogs all over the web and I have to admit: It's a pretty genius idea.

You've probably made popsicles at home as a kid — pouring some type of sugary liquid into those little paper cups and placing little wooden craft sticks/tongue depressors the middle — and now you can make them as an adult with a little something extra (but be sure to keep them away from the kids).

Check out these recipes on Endless Simmer for instruction and inspiration, then come up with a few of your own. Mojito, margarita, even Bloody Mary — the pop-tail possibilities are endless! (Personally, I'd like one in the shape of David Hasselhoff.)
