In 2005, the state's oldest restaurant and the dowager queen of its ilk will reach her 100th birthday. But she is still a player: With a newly-hired chef, new state-of-the-art, 5,000-square-foot kitchen, and sensitive renovations that have preserved the beautiful Spanish tile, Moorish mood and priceless cut-glass chandeliers, The Columbia is simply a wonder no one should miss. It's great for a big night out with your pals, your True Blue or your family. The service has always been exemplary, but the food has improved considerably, and you'll find excellent traditional Cuban dishes like black beans, boliche and a memorable flan. For toppers, the restaurant also features a spellbinding flamenco show six nights a week.
