Usually, when you find rabbit on the menu, it’s either gonna be a super-simple farm-to-table dish or something classically European. Fly goes in a totally unexpected direction with its diminutive braised rabbit tacos, and man, does it pay off. The meat is slow-cooked in liquid until super-tender and spicy, hand-pulled, and accessorized with queso fresco and a subtly fiery habanero gastrique, but you still know you’re getting a taste of something more unique than pork shoulder or chicken.
