New chicken-focused restaurant, The Hatchery, will open this month in South Tampa

Chris Elliott, CEO of Beef 'O' Brady's, is opening a chicken-focused joint in South Tampa. The Hatchery is opening a storefront at 201 N. Dale Mabry Hwy on August 31.

The Hatchery prides itself on cooking with hormone-free chicken, fresh ingredients and house-made sauces. The concept initially opened as a ghost kitchen location in Tampa for delivery and pickup orders.

The menu is loaded with all things chicken: wings, nuggets, tenders, sandos and salads. The specialty menu offers the Sunrise burger breakfast sandwich, made with two eggs, cheddar cheese, and hickory-smoked bacon. You can also opt for the classic Hatch burger served on a toasted brioche bun. Sides for meals are bites like farmhouse fries, onion rings, coleslaw, mac n’ cheese, or a garden salad. There’s even a lineup for “little chicks” for kids 12 and under. 

Dipping sauces range from mild flavors like the signature “Hatch,” ranch, and honey mustard and rank up in heat with selections including hot honey, poblano and peri peri. If you can handle some heat, you can also try your chicken spicy.
