Wine and cheese pairing: Two rules and a few suggestions

It’s no secret that I love wine. But my relationship with cheese has been going on since I was a child. I was probably eight years old when I discovered the cheese course at the end of a meal. We lived in Europe and I was fortunate to be introduced to an amazing array of cheeses.

Cheese and wine can be brilliant together. Both are produced by transforming simple ingredients through fermentation. Whether you enjoy them before or after dinner, as the meal itself, or as the focus of a social event, the possibilities are nearly infinite.

People often discuss wine and cheese pairing in terms of rules. A common rule is white wine with soft cheese and red wine with hard cheese. I find those rules too restrictive, and too likely to cause you to miss out on pairings that may be wonderful. I have two hard and fast rules.
