Mindfully baked: New Craft Kafé opens with gluten-free focus

Alongside gluten-free baked goods, caffeine and frozen treats are served at Craft Kafé in St. Pete.

Operating in soft-opening mode, St. Petersburg's contemporary Craft Kafé opened its doors in the West Central Shopping Center at 6653 Central Ave. less than a month ago.

The bakery-coffeehouse-creamery, co-owned by chef and New York native Teddy Skiadiotis, specializes in gluten-free baked goods, including breads and muffins. Locals may be familiar with Skiadiotis if they've visited Skidder's Restaurant in St. Pete Beach, which he's operated with his family for more than 20 years.

"I mill my own flour to make sure everything is 100 percent gluten-free," Skiadiotis said in a press release. "We know the origins of everything prepared and served at Craft Kafé."

The 1,300-square-foot cafe also features salads, soups and sandwiches with organic ingredients alongside house-made popsicles and gelato. Patrons choose from locally roasted coffee, fresh juice or loose-leaf tea as well.

Craft Kafé is open 6 a.m. to 7 p.m. Monday through Friday; 7 a.m. to 7 p.m. Saturday; and 8 a.m. to 4 p.m. Sunday.
