It's the first day back to school for many and that conjures up one food image for me: sandwiches! And, since today also happens to be Meatless Monday, I went on a hunt for some meat-free delights between two slices of bread and found these creative recipes that would make great options for your (or your kid's, if they have adventurous taste buds) lunch box or dinner table.
