The newest plant-based spot, Ybor City Vegan Deli, hopes to be fully-open and ready for business by Saturday, April 10. After a soft opening on April Fools Day, the V.M. Ybor restaurant located at 1903 N 19th St., has been sporadically open while ironing out kinks.

Freshly sliced “pourk” for Cuban sandwiches, pizza (whole pies and by the slice), breakfast sandwiches, deli meats by the pound, Phillies, burgers, and desserts are a few of the items teased so far on the deli’s Facebook page.

The Ybor location is one of a handful of other locations owned by the group, with Dunedin Vegan Deli being the OG shop at 2340 Main St. The Brandon Vegan Deli at 859 Lithia Pinecrest Rd. opened in January and a fourth location in Sarasota at 5119 Tamiami Trail hopes to open in May.

E.J. Easterbrook is the majority owner of the group but in an email, operations representative Jamey Harper told Creative Loafing Tampa Bay that “ ...our ownership team is actually quite large as a good percentage of the team holds equity.”

Current hours for Dunedin and Brandon shops are Monday=Friday 9 a.m.-8 p.m., Saturday 11 a.m.-8 p.m. and Sunday 11 a.m.-4 p.m.

“It’s our goal by the end of the weekend to have all three using the same hours and menu,” Harper added. Dunedin currently has its full menu up and running, which includes Blarby’s roast beeph, crackaroni, Sriracha macaroni salad, and a corned beeph reuben (pictured below).
