Anne Vela’s version of pineapple upside down cake is both more traditional and more flexible, reflecting the more relaxed atmosphere and devotion to sustainability of her Café Hey, one of the best coffee shops in the world if you want a serious nosh with your cup o’ joe. Vela doesn’t even call it a Pineapple Upside Down Cake because, as she puts it, “you can use whatever fruits you have becoming moldy in the back of the fridge.” Not too moldy, hopefully.
