Earlier this month, a create-your-own ice cream sandwich parlor called Sweet Stack Shack opened in St. Petersburg's EDGE District. The sweets shop at 1041 Central Ave. — where Escape St. Pete operated before relocating to the nearby Grand Central District — specializes in stuffing freshly baked cookies and brownies with a patron's choice of ice cream.

Here's how it works: Pick a brownie or a cookie (macadamia nut and snickerdoodle are among the latter's options). Select one of the locally sourced ice cream flavors. Choose from toppings like Fruity Pebbles, peanuts, M&Ms and rainbow sprinkles. The staff warms up the customized sandwich, and then? It's time to indulge.

While there aren't any vegan options, Sweet Stack Shack does offer a gluten-free chocolate chip cookie, as well as two lactose-free ice creams.

Patrons are also welcome to order their cookies, brownies and scoops of ice cream a la carte.
