Never underestimate a strip mall restaurant — this place has been packed with locals for the last few weeks since its opening.
The menu is loaded with various styles of tortas, enchiladas, burritos and chile rellenos, not to mention a street taco selection where you can choose from veggie, carne asada, or campechano as well as fish, chicken and/or shrimp ranging from $3-$4 each. Entrees come with one side and range from fat dishes like Rajitas Poblanos to Pollo Guero, which is made up of grilled chicken breast, served with sauteed mushrooms and peppers smothered in queso dip.
You can never get enough queso.
The restaurant also pours up a selection of bottled brews and margaritas, which prove to be a prime pairing for any dish.
Happy Cactus is serving up hefty portions of authentic Mexican eats Monday through Friday from 11a.m.-9 p.m., Saturday from noon-9 p.m., and Sunday from 1-8 p.m.
