Ibbi's Q food truck is a week away from slinging racks of ribs and fat sandwiches in Pinellas.
Next week, Ibbi's food truck expects to launch operations at 1698 N. Hercules Ave. in Clearwater. Owner Roger Ibbitson told CL he is hoping for a smooth licensing and permitting process and aiming for an October 31 grand opening.
The 'cue truck offers sandos like the signature "Ibbi" (pulled pork topped with melted cheese sauce and slaw) or the mondo "Shecky" (pulled pork and chicken on a bun with your choice of topping, fork and napkin recommended).
Go can also go big by snagging a plate with a selection of meats and sides starting at $8.50. Going big and sloppy? Bring a bib for a quarter, half or whole rack of ribs. The Ibbi's menu claims "ya can't have bbq without bird options," so chicken legs and thighs, as well as turkey legs, are up for grabs. Sides include cowboy beans, potato salad mac and cheese, and coleslaw. You can always slide by for desserts, like banana pudding, or a creation the truck calls "candied heaven" (a lemon bar topped with candied bacon).
If you're picky about your sauce, the Ibbi's list is stacked with styles from all over the country (Alabama, Kansas, Missouri, North Carolina, Tennessee and Texas).
