Pacific Counter is taking a more unconventional approach to the observation of its grand opening. The downtown St. Pete newcomer premiered at 660 Central Ave. earlier this month, but owners Tanner Loebel, Eric Bialik and Chitt Noythanongsay plan to celebrate their speedy chef-inspired cuisine's formal arrival with a sushi burrito-cutting ceremony.

Who needs a ribbon when you can snip one of your signature offerings?

The ceremony is scheduled for 1:45 to 2:30 p.m. Thursday, Sept. 20.

Create-your-own sushi burritos and poke bowls drive the fast-casual menu at Pacific Counter, where spicy means spicy. Chef Tock, however, has also designed signature builds like The O.G. (tuna, avocado, edamame, greens, shredded nori, onion, sesame seeds, "poké classic sauce") and Golden Hour (salmon, crab, avocado, scallion, carrot, cucumber, shredded nori, masago, "counter sauce") for patrons who aren't up for customizing their meals.

Another thing Pacific Counter guests shouldn't miss: rotating "wave items," aka market-fresh selections featured on the line for a limited time.

Then there's the Dole Whip, which you just have to taste for yourself.
