What is up with the month of October? It seems like everything is being memorialized, canonized or summarized. There are more than 50 organizations commemorating things this month, including chicken, pretzels, honey and biscuits. Honey and biscuits? That sounds good. Can we combine the two? However, for every food we celebrate, there's a wine waiting to be uncorked. So let's commemorate!

National Spinach Lovers' Month: I'm strong to the finish, 'cause I eats me spinach and I like to saute it and add goat cheese and toasted walnuts or pecans. This recipe pairs well with Mar de Frades Albariño Val do Salnes 2011 Rias-Baixes. The wine is floral with sweet apple flavors that offsets the nutty pecan flavors and softens the cheese's creaminess. Rias-Baixes is in the panhandle of Spain and the Val do Salnes is the original and oldest sub-zone with the most area under vine and the highest concentration of wineries in the region.
