Using the springboard of Spain’s wonderful smoked paprika, pimentón, Castile has made orange a theme. From the valet’s shirts to the barstools, from the bright throw pillows to the soft leather booths, orange is everywhere. Even in the food. There’s a reflecting pool of orange-tinged oil to dip bread in, a garlicky sauce the color of Christina Hendricks’ hair for the lobster appetizer, and an orange-flavored flan cheesecake mashup. It’s a welcome marriage of hip decor and great food.
