Over the summer, celebrity chef and "Hell's Kitchen" contestant Robert Hesse debuted his specialty grilled cheese concept, Fo'Cheezy. He has a brick-and-mortar on St. Pete Beach as well as a food truck to roam the streets of the St. Petersburg, but on Dec. 21, the Fo'Cheezy gang took to Facebook, thanked "MELTZ FANS" for the support, and announced a forthcoming second location in downtown St. Petersburg, attributing the growth and success to its following. 

"…we will continue to do what we’ve always strive for to push boundaries and culinary edge and a dope experience," the post said. 

According to local blog, I Love The Burg, Fo'Cheezy's second shop will begin buildout in January 2021 within the former Five Guys space at 111 3rd St. N. Being that the fast-casual restaurant's menu is stacked with specialty grilled cheese sandwiches, it'll be prime late-night eats for nightcrawlers stumbling out of downtown St. Pete's first block bars. 

One of the insane combinations on the menu is the Big Poppa ($12) made with colby jack, mojo roasted pork shoulder, honey ham, smoked bacon, dill pickles, green chili mayo, dijonaise, and pickled red onion. Guests can choose to have their melt served on artisan sourdough or cracked whole wheat bread. You can also opt for gluten-free bread or vegan cheese for $2 extra. Sandos on the menu could be split between two people, but also make for legit leftovers if you follow Hesse's instructions for reheating. Seriously, listen to the chef. 

Other Fo’Cheezy eats include sides like a variety of tots (truffle, cheesy, loaded), cheese curds, mac n’ cheese, soups, and salads. The over-the-top eats don't stop there. The dessert selection is just as imaginative with hits like Dough Boyz made up of chocolate chip cookie dough egg rolls or Gimme S’more a vanilla custard brioche french toast dish served with fluff, nutella, graham cracker crumbs and Cocoa Puffs. There’s also a selection of hand-spun shakes like the Go Shorty—a strawberry ice cream shake served with Twinkies, strawberries, shortbread crumbs and topped with whipped cream. 

We expect the downtown St. Pete location to mirror the same flair and affinity for '90's rap culture, playing hits by the greats while you dine while the walls are decked out with mixed tapes and murals.

Until then, you can slide by for a cheese-filled adventure at the St. Pete Beach location stationed at 6305 Gulf Blvd. Guests can dine-in at socially distanced tables, masks are required to enter. If you're not ready to join the Fo'Cheezy crew, you can opt for curbside pickup.
