Robert Hesse, contestant on Seasons 5 and 6 of the hit series Hell’s Kitchen, has his sights set on launching his latest concept, The Urban Melt, early next year at 1221 4th St N. in St. Pete.

Hesse has put in an offer on the former China City property, and is awaiting confirmation to begin a complete renovation of the building.

“Its not your mama’s grilled cheese,” Hesse explains, “I want to have funky melts, and push the envelope on edgy offerings. My mission is urban street to table.” 

The menu is set to showcase intriguing flavor combinations like an Asian potsticker melt and a twist on a Cuban sandwich called Cuban War Pig. Paying homage to a bohemian vibe, the eclectic and affordable menu will change regularly to incorporate industry trends and seasonal flavors. “Nothing is priced over $10, I want my menu to be accessible,” Hesse reassures. “I’m doing this."

Hesse, a Childs Park resident, is excited about St. Pete’s growth, and wanted to join the movement. He also plans to give back not only through donating portions of sales from The Urban Melt to charities for at-risk children, but also hiring those with blemishes on their record who would otherwise have trouble finding employment. 

“I’m a guy with a record, who happens to have more opportunity than others, and I want to be able to pay that forward,” Hesse says.

Before the doors open, Hesse is taking the concept on the road. Next month, the reality TV star is flying out to film as a competitor on the Food Network series The Great Food Truck Race. Throughout the season, Hesse will compete against other food trucks with varying cuisines across the country. The last team standing gets to keep their food truck as well as win a cash prize of $50,000. 

After the launch of The Urban Melt brick and mortar, Hesse is open to the idea of food trucks and multiple locations in the future — possibly even franchising the business.

As if the chef isn’t busy enough, later this month, he is taking on the position of executive chef at Smokin’ 19, where he will assist in the rebranding of the barbecue joint. 

In the coming weeks, the restaurant will host its First Annual BBB — brews, blues and barbecue — event to welcome Hesse aboard. More details will come as the event approaches.
