Last week, Council Oak Steaks & Seafood, located inside the Seminole Hard Rock Hotel and Casino, launched “Wine Down Wednesday,” featuring hand-selected wines from various vineyards across the globe. Some of the wines available this month include Chalone Chard, Chateau Ste. Michelle Eroica Reisling, Duckhorn Sauv Blanc, Dynamite Cab, Domaine Carneros Pinot Noir and Wente Crane Ridge Merlot.

Alongside the vino, head chef Michael Balles has designed a fresh tasting menu full of character, excitement and essence. During a recent visit, the eats were paired with glasses of wine to complement each bite.

"My inspiration came from a little idea I had in the back of my mind," Balles said. "I was strategizing creative ways to make Council Oak more approachable to the local scene. I created a small menu that brings some of the best items from Council Oak, and I hope it catches on in Tampa Bay. I’d be the first in line if I wasn’t working."

The new food lineup highlights Buffalo Blue Cheese Deviled Eggs, cheese and charcuterie, grilled flatbread, barbecue oysters, sliders, miniature cheese steaks, Ybor Crab Croquets and bruschetta. Wines by the glass and food items will cost $10, including wines that are generally only available by the bottle.

Reservations are not required for the weekly event, and guests can uncork and “wine down” from 4 to 9 p.m. every Wednesday.
