New Cocina Aqui restaurant heats up Redington Shores

Cocina Aqui & Tequila Bar, a recently launched Mexican dining spot in Redington Shores, plans to hold its soft opening until the end of the month.

Owned by Louie Spetrini and Fran Bartlett, the restaurant at 17814 Gulf Blvd., formerly home to The Lobster Pot, operates 1 to 9 p.m. Tuesday through Sunday.

Executive chef Paul Daubert cranks out Mexican fare inspired by the southwestern side of the United States, including street tacos, grilled seafood salad, nachos and short ribs.

There are indoor and outdoor bar areas with dozens of tequila offerings, as well as salsa dancing and Latin jazz featured on the weekends.
