By late December, New Tampa will have a new concept offering a completely gluten-free menu.

It's called Mahana Fresh, and it lives at 17512 Dona Michelle Dr. The franchise location is run by local entrepreneur Ryan Mortti, who is confident that Mahana Fresh is just what New Tampa needs.

"It is right at the intersection of Bruce B. Downs and the [I-75]. With New Tampa continuing to grow, I wanted to get in on that process, while offering up healthier options," the franchisee told CL.

Mahana Fresh's menu thrives on the build-you-own-bowl model, and allows diners to choose their base, protein, toppings and sauces. The Mahana menu even has a few dessert bite options including zucchini brownies, chocolate chip cookies, and snickerdoodles — all gluten-free. The fast-casual restaurant also offers up craft beer (not gluten-free) and kombucha on tap.

Mortti is finishing up with the permitting process before construction rolls out; he thinks the concept is eight weeks away from the debut. If you want a sneak peek of what Mahana Fresh is all about, the franchise recently opened a location at 4808 14th St. W. in Bradenton.
