Pair O' Dice Brewing announces return of its biggest IPA

Brewed once every 18 months, the Clearwater brewery's Pit Boss Triple IPA is back.

Brewed once every 18 months, Pair O' Dice Brewing Company's Pit Boss Triple IPA is back.

The Clearwater craft brewery, known for its IPAs and ales brewed with Florida ingredients, will release The Pit Boss in its taproom at 4 p.m. Friday on draft — and in four-pack cans. Back in August, Pair O' Dice invested in a Wild Goose semiautomatic canning line.

Made with a blend of Amarillo, Apollo, Chinook, Mosaic and Simcoe hops, The Pit Boss is the brewery's biggest IPA. According to head brewer Ken Rosenthal, who wanted to bring fresh, hoppy, West Coast-style IPAs to the state when he opened Pair O' Dice three years ago, he's taken inspiration from the Northeast as the IPA market changes and new hop varieties become available.

His limited imperial IPA calls for more than four pounds of hops per barrel and weighs in at 11.5 percent alcohol by volume.

"I love IPAs and The Pit Boss Triple IPA is my masterpiece," Rosenthal says. "[It] blends the clean, hoppy, light bodied west coast imperial IPA with the juicy and fruity IPAs of New England. There is a distinct citrus and tropical fruit profile that I love about this beer. It tastes like hop candy and it's a delicious damn imperial IPA."

Starting Monday, the beer will be featured on draft at select Florida beer retailers.
