St. Pete icon Red Mesa Cantina officially opened its fourth concept yesterday, and for now it’s a ghost kitchen serving a little bit of everything.

Called Red Mesa Quatro, marketing director Tony Pullaro told Creative Loafing Tampa Bay that the new virtual restaurants is utilizing the event space on the second floor of Red Mesa Cantina, located at 128 3rd St. S. in downtown.

Quatro’s menu covers a wide swath of culinary territory, featuring everything from classic cubans, ranch fries, BBQ chicken sandwiches, bacon-wrapped hot dogs, poke bowls and pad thai.

While Quatro is currently open for delivery, Pullaro said the concept will eventually switch to a fast-casual format once the coronavirus pandemic simmers down.
