In its 12,000-square-foot upstairs space at downtown St. Pete's Sundial plaza, Sea Salt, the upscale seafood-focused eatery owned by restaurateurs Fabrizio and Ingrid Aielli, premiered at 4 p.m. Monday.

The Aiellis opened their admired flagship Sea Salt to Naples folks in 2009. The 300-seat, indoor-outdoor St. Petersburg restaurant showcases an 80-foot-long raw bar and a 20-foot-tall wine tower.

More than 20 kinds of the continent's best-loved oysters, such as the Wellfleet and Gulf varieties, are featured alongside contemporary (and splurgy) menu items, including pastas, custom-cut beef and sandwiches, that integrate artisanal and local ingredients.

Diners can expect to get acquainted with the rare and imported salts used in Sea Salt's food and cocktails, too.
